Pair the wine list to the food menu, not the distributor's catalogue

Build restaurant wine pairing from the three plates that actually sell, not from a tasting of open cases. For Italian kitchens and lists.

If the kitchen is regional and the wine list is a distributor's greatest hits, the table feels it. The guest eats one story and drinks another. Pairing, on this site, is not a ceremony. It is whether the wines you carry sit with the plates you actually send.

Start from the pass, not from the crate

Take the three dishes that leave every night. Write one wine you already have next to each. If you cannot, the list is a catalogue.

A pairing that only works with a special that ran last May is a tasting note, not a programme. The floor needs matches for Thursday.

Weight first: sauce, fat, salt, heat, vinegar. A heavy red next to a sharp salad is how wine "doesn't sell with food" becomes a myth you tell yourself. A modest wine next to a modest plate is allowed. Not every night is a pairing dinner.

Unconventional is allowed if it sells

Pizza and a Lambrusco or a Franciacorta instead of the default beer, cooked vegetables and a skin-contact white you can pour by the glass, a Vermentino with the frittura: if the guest will order it and the margin works, it is a pairing. If it only exists to look clever on Instagram, it is a hobby.

Do not claim worldwide firsts on this page. Claim what the room can repeat.

The list order should follow the food

Once the matches exist, the page should not hide them in "Piemonte / Toscana / Altre regioni." Wine-list design is the layout. Language is the clause ("with the ossobuco"). Three written answers is how service uses the work when you are on the pass.

Regional wine belongs where it sits with the food, not in a "vini del territorio" box at the back. Regional wine on the list.

I help restaurants, hotels and bars in Italy earn more from the wine they already sell. I price lists wine by wine, cost by-the-glass programmes on their real yield, rebuild selections around the food menu, and rewrite lines so guests understand what they're ordering.
