When the wine of the territory earns its place on the list

Vini del territorio are not a duty. Put regional DOC and native grapes on the list when they pair, pour, and still leave margin after 10% IVA. Skip the token page.

Vini del territorio are not a duty you pay to the province. A regional wine earns a slot when it sits with the food, when the guest will order it, and when true cost still leaves a margin after 10% IVA. A token "Vini della regione" page at the back of the card is theatre. A short, pourable regional set next to the dishes that need it is a programme.

Why the token page fails

Guests who wanted local already looked. Guests who did not will not travel to page four to be educated. If the Vermentino that belongs with the frittura, or the Nebbiolo that belongs with the brasato, is locked in a regional box, you hid the pairing.

Put the wine where the food is. Write the denomination (DOC, DOCG) and the native grape in the line, not in a separate chapter. The label on the bottle is a trust signal; it is not a sales clause on its own.

Cost is the adult conversation

Some famous denominations are expensive for what the guest will pay in a neighbourhood osteria. If true cost only works at a selling price that looks like a dare, the bottle is a shop wine, not a list wine. Often the answer is in the same territory: Langhe Nebbiolo next to the Barolo, Rosso di Montalcino next to the Brunello, a Valpolicella Superiore next to the Amarone. Choose a pourable regional wine that survives a glass programme, or skip it. Pride that sits in the cellar is still cash.

Phone-check is weaker on small producers and native grapes people cannot price from memory: a Timorasso, a Pallagrello, a Nerello Mascalese from a grower nobody has googled. That is a side benefit, not a licence to gouge. Markup manners.

Guests from elsewhere

Hotel F&B and tourist rooms: visitors want "a wine from here" as a souvenir in a glass. Give them one good answer by the glass, costed, named, sayable, not a flight of seven they will not finish. Locals want the same honesty they want on any other line: sayable, fair, next to food. A list that is all territory and no choice is also a decision; make it on purpose.

Selection still starts from the pass: pair to the menu.
